You don’t need to throw a BBQ to enjoy these chicken and veggie skewers! Thread up marinated chicken breast, mushrooms, bell peppers, tomatoes, and zucchini, and let your oven do the work.
When you move past the puree and soft food stage post-op and are ready for something a little heartier, turn to this easy bariatric recipe. These chicken and veggie kabobs are great for meal planning, as you can easily make a big batch, reheat, and serve throughout the week. It’s a heart-healthy recipe you definitely want to include in your bariatric diet!

This recipe yields four servings you can share with the family, or you can meal prep and store them in separate single-serving containers to enjoy the next few days! Everyone in the family will love it, and bariatric patients will appreciate how easy it is on your digestive system after weight loss surgery.
Ingredients
1 tsp grated lemon zest
2 tbsp fresh lemon juice
1 tsp dried oregano
3 tsp olive oil, divided
2 garlic cloves, minced
1 lb boneless, skinless chicken breasts (cut into 16 cubes)
16 whole button mushrooms
1 bell pepper, diced
16 cherry tomatoes
4 zucchini, spiralized
Dash of black pepper
Directions
Preheat the oven to 425 °F.
To make the marinade, stir the lemon zest, lemon juice, oregano, 2 teaspoons of olive oil, and garlic in a mixing bowl.
Place chicken cubes in a large Ziploc bag and pour the marinade over the top. Close the bag and use your hands to distribute the marinade evenly. Refrigerate for at least 15 minutes.
Meanwhile, soak eight 8-inch wooden skewers in cold water to prevent charring.
When the chicken is done marinating, thread them on the skewers with the bell peppers, tomatoes, and mushrooms in an alternating pattern.
Place the skewers on a baking sheet lined with aluminum foil and bake for 20-25 minutes, flipping the skewers halfway through.
Heat the remaining teaspoon of olive oil in a pan and set over medium heat. Add the zucchini noodles and toss for 2-3 minutes or until tender. Remove from the heat and sprinkle with black pepper.
Serve your chicken and veggie skewers over the zucchini noodles, and enjoy!
