Incorporating puréed foods into your bariatric diet can be intimidating, with textures and consistencies you may not be accustomed to. This creamy, puréed diet recipe will surprise you with a fusion of flavors from pumpkin, spices, and coconut milk.
Best part? It only takes 10 minutes, a blender (or food processor), and a soup pot to make!
Most people associate pumpkin with the fall season, but this puréed recipe can be enjoyed year-round. It’s easily meal-prepped to incorporate throughout the week as part of your bariatric meal plan.
Recipe Tip: Get that perfect swirl of cream on top to make this puréed recipe just as visibly appealing as it tastes. Drizzle a tablespoon of plain Greek yogurt over this bright orange soup before serving for a true crowd-pleaser! Also, if you don't love the chicken soup flavor, you can interchangeably use Unflavored Protein Powder.
2 (15-ounce) cans pumpkin purée
2 cups low-sodium chicken broth
1 cup coconut milk
2 scoops Bariatric Fusion Chicken Soup High Protein Meal Replacement
2 teaspoons onion powder
1 teaspoon sea salt
1 teaspoon garlic powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground black pepper
Puree the ingredients in a blender. Alternately, mix together by hand. Pour into a medium-sized soup pot.
Bring the soup to a simmer over medium-high heat, then reduce to medium-low and simmer for 5 minutes.
Serve and enjoy!
