A great side dish for your next party!
Ingredients
6 eggs
1/4 avocado
1 tbsp plain, Greek yogurt
2 tbsp low-fat mayonnaise
1 tsp mustard
1 tsp lemon juice
1 tsp paprika
Directions
Place eggs in a pot, add enough water to cover them, and place over medium heat.
Bring the water to a boil. Once boiling, turn the heat off and cover the pot.
Wait 15 minutes and then transfer the eggs to an ice bath.
Once cool, peel the eggs and halve them lengthwise.
Remove the yolks and transfer them to a small bowl, setting aside the whites.
Add the yogurt, mustard, avocado, and lemon juice with the yolks and mash.
Pipe the filling into each egg half and sprinkle with paprika.
