Chicken wings are a staple in every bar and restaurant, especially when it comes to tailgating and sports season. Don’t worry about missing out when you have this buffalo chicken wing wonton recipe! These bite-sized wonton cups deliver a burst of flavor and spice to your palate. The best part is that this recipe utilizes healthy alternative ingredients like plain Greek yogurt and low-fat cheese to mimic chicken wing dip consistency and flavor. Dig in!
Ingredients
2 boneless, skinless chicken breast
2 Tbsp olive oil
1/2 tsp paprika
1/2 tsp chipotle chili powder
24 wonton wrappers
4 oz 1/3 less fat neutchatel cheese bar
1/4 cup plain greek yogurt
1/2 cup hot sauce
3 oz blue cheese crumbles
Directions
Preheat oven to 350°F.
Spread olive oil over chicken breasts; then sprinkle evenly with paprika and chili powder.
Place in a baking dish and cook for 25-30 minutes.
Remove chicken and let cool, then shred.
While the chicken is cooking, place wonton wrappers in 24 mini baking cups, pressing the wrappers into the sides of the cups.
Bake wonton wrappers for 5 minutes or until light brown. Keep the wontons in the baking cups.
In a medium-sized bowl, stir together cream cheese, yogurt, and hot sauce. Add the chicken and stir until well coated.
Fill each wonton cup with a Tbsp. of the creamy chicken mixture, and add a pinch of blue cheese crumble.
Return wonton cups to the oven and cook for another 5-10 minutes, or until the cheese is melted.
Remove and serve immediately.
