Ingredients
1 large zucchini
1 cup reduced fat, grated parmesan cheese
2 eggs
1/2 cup panko bread crumbs
Sprinkle of salt and pepper
Directions
Preheat the oven to 425°F.
Wash zucchini and cut into 1/2 inch slices.
In a small bowl, beat eggs. Dip the zucchini slices into the egg.
In a medium-sized bowl, mix together parmesan and panko. Roll the egg coated zucchini slices into the mixture.
Cover a baking sheet with parchment paper. Spread zucchini slices out evenly.
Sprinkle with salt and pepper.
Bake for 10-15 minutes, then flip and bake another 10-15 minutes.
