All you need:
1 cup unsweetened almond milk or other milk substitute
1/4 tsp mint extract
1 small handful of spinach (or a few drops of green food coloring)
Optional 1: Add 3-4 ice cubes to chill and thicken
Optional 2: 1/2 small frozen banana
