Ingredients1 tsp grated lemon zest2 tbsp fresh lemon juice1 tsp dried oregano3 tsp olive oil, divided2 garlic cloves, minced1 lb boneless, skinless chicken breasts (cut into 16 cubes)16 whole button mushrooms1 bell pepper, diced16 cherry tomatoes4 zucchini, spiralizedDash of black pepper View Cart (0) Checkout DirectionsPreheat the oven to 425 °F. To make the marinade, stir the lemon zest, lemon juice, oregano, 2 teaspoons of olive oil, and garlic in a mixing bowl. Place chicken cubes in a large Ziploc bag and pour the marinade over the top. Close the bag and use your hands to distribute the marinade evenly. Refrigerate for at least 15 minutes. Meanwhile, soak eight 8-inch wooden skewers in cold water to prevent charring. When the chicken is done marinating, thread them on the skewers with the bell peppers, tomatoes, and mushrooms in an alternating pattern. Place the skewers on a baking sheet lined with aluminum foil and bake for 20-25 minutes, flipping the skewers halfway through.
