Ingredients1 large zucchini1 cup reduced fat, grated parmesan cheese2 eggs1/2 cup panko bread crumbsSprinkle of salt and pepper View Cart (0) Checkout DirectionsPreheat the oven to 425°F. Wash zucchini and cut into 1/2 inch slices. In a small bowl, beat eggs. Dip the zucchini slices into the egg. In a medium-sized bowl, mix together parmesan and panko. Roll the egg coated zucchini slices into the mixture. Cover a baking sheet with parchment paper. Spread zucchini slices out evenly. Sprinkle with salt and pepper.
